Lemon Poppy Seed Cottage Cheese Pancakes

What you need:
- 1 cup flour
- 1 Tbsp. poppy seed
- 2 tsp. baking powder
- 2 eggs
- 1 cup BREAKSTONE’S Cottage Cheese
- 1/2 cup milk
- 3 tsp. lemon zest
- 2 tsp. vanilla
- 1/4 cup lemon juice, divided
- 6 Tbsp. powdered sugar
How to make it:
- Mix first 3 ingredients.
- Beat eggs, cottage cheese, milk, lemon zest, vanilla and 2 Tbsp. lemon juice in medium bowl until blended. Stir in flour mixture.
- Ladle batter onto nonstick pan, using about 1/3 cup batter for each pancake; cook until bubbles form on tops, then turn to brown other sides.
- Stir remaining lemon juice and powdered sugar in small bowl until combined. Serve with pancakes.
