Roasted Garlic & Lemon Baked Ricotta Dip

What you need:

  • 1 head garlic
  • 1 Tbsp. plus 2 tsp. olive oil, divided
  • 1 container (15 oz.) BREAKSTONE’S Ricotta Cheese
  • 1/4 cup grated Parmesan cheese
  • 2 Tbsp. lemon zest, divided
  • 2 Tbsp. lemon juice

How to make it:

  • Heat oven to 400°
  • Cut thin slice off top of garlic; discard top. Place garlic on baking sheet lined with foil; drizzle with 2 tsp. oil. Reserve.
  • Mix ricotta, Parmesan and 1 Tbsp. lemon zest in medium bowl until blended; spread onto bottom of 9-inch pie plate. Place plate on baking sheet next to garlic.
  • Bake 30 to 35 min., or until edges are golden brown, removing garlic from oven after 20 min.
  • Squeeze pulp from garlic cloves into mixing bowl. Add remaining oil, lemon zest and lemon juice; stir. Spoon over warmed ricotta.

SPECIAL EXTRA

Garnish with fresh thyme leaves.

SERVING SUGGESTION

Serve with your favorite crackers.
