Double Chocolate Cottage Cheese Cookie Dough

What you need:

  • 1 cup BREAKSTONE’S Cottage Cheese
  • 2 Tbsp. maple syrup
  • 1 tsp. vanilla
  • 1-1/4 cups almond flour
  • 1/4 cup vanilla protein powder
  • 1/4 cup cocoa powder
  • 1/4 cup dark chocolate chunks

How to make it:

  • Blend cottage cheese, maple syrup and vanilla together in a food processor until smooth; transfer to a large bowl.
  • Stir in remaining ingredients. Cover and refrigerate until ready to eat.

MAKE AHEAD

Dough can be stored in a resealable container in the fridge up to 3 days.  

TO MAKE TRUFFLES

  • Prepare cookie dough as directed. Using a 1oz scoop, scoop dough into 21 balls; place onto baking sheet lined with parchment. Freeze 1 hour or until hardened.
  • Melt 1-1/2 cups each dark and milk chocolate wafers according to package instructions. Using a fork, dip each ball into melted chocolate to fully cover, alternating between dark and milk chocolates. Gently tap the dipped ball to remove any excess chocolate; transfer to baking sheet to set.
  • Drizzle chocolate-coated balls with alternating chocolate. Let stand until set.
