Cottage Cheese Granola Cups

Breakfast Snack

What you need:

  • 1-1/2 cups honey granola
  • 1/4 cup melted coconut oil
  • 3 Tbsp. maple syrup
  • 1 Tbsp. flax meal
  • 1 Tbsp. chia seeds
  • 1/2 tsp. cinnamon
  • 1/2 cup plus 2 Tbsp. BREAKSTONE’S Cottage Cheese
  • 1 Tbsp. lemon zest
  • 2 cups sliced fruit (kiwi, blueberries, raspberries, bananas, strawberries)

How to make it:

  • Heat oven to 350°F.
  • Combine granola, coconut oil, maple syrup, flax meal, chia seeds and cinnamon. Spoon mixture into 8 muffin cups lined with muffin liners. Using the back of a spoon, make a well in the center of each cup.
  • Bake 5 to 10 min. or until golden brown. Remove from oven; cool completely.
  • Fill cooled cups evenly with cottage cheese; top with fruit. Serve immediately.
