Apple Ricotta Cake with Maple Glaze

What you need:
- 3 apples, peeled, sliced (4 cups)
- 2/3 cup plus 1 Tbsp. sugar, divided
- 2 tsp. ground cinnamon, divided
- 3 eggs
- 1 container (15 oz.) BREAKSTONE’S Ricotta Cheese
- 2 tsp. vanilla
- 1/2 cup plus 1 tsp. butter, divided
- 1-1/2 cups flour
- 2 tsp. baking powder
- 3/4 cup maple syrup
How to make it:
- Heat oven to 350°
- Mix apples, 1 Tbsp. sugar and 1 tsp. cinnamon together in large bowl; set aside.
- Whisk eggs, ricotta and vanilla in large bowl until well blended. Melt 1/2 cup butter; whisk into ricotta mixture.
- Combine flour, baking powder and remaining sugar. Add to ricotta mixture; mix until combined.
- Pour half of batter into 9-inch round pan greased with 1 tsp. butter and lined with parchment paper. Top with half of apples; repeat layers.
- Bake 1 hour to 1 hour 15 min. or until toothpick inserted in center comes out clean. Cool 10 min. on wire rack; remove from pan.
- Meanwhile, combine syrup and remaining cinnamon in saucepan over medium heat. Cook, stirring constantly until thickened, about 3 min.
- Pour syrup over cake. Serve warm.
