Pumpkin Cottage Cheese Bread

Breakfast Snack

What you need:

  • 1 cup BREAKSTONE’S Cottage Cheese
  • 2-1/4 cups flour
  • 1/2 cup pumpkin puree
  • 1/4 cup sugar
  • 2 tsp. active dry yeast
  • 1/2 tsp. pumpkin spice
  • 2 eggs, divided
  • 1 Tbsp. milk
  • 2 Tbsp. pumpkin seeds

How to make it:

  • Blend cottage cheese in a blender or food processor until smooth.
  • Combine cheese, flour, pumpkin puree, sugar, yeast, pumpkin spice and 1 egg in large bowl of stand mixer fitted with dough hook. Beat on medium-low speed 10 to 15 min. or until mixture forms firm, elastic dough.
  • Knead dough on lightly floured surface 5 min. or until smooth; shape into ball.
  • Transfer ball to a lightly oiled bowl; cover with plastic wrap and a towel. Let stand in warm place 2 hours or until doubled in size.
  • Divide dough into 6 equal pieces. Roll each piece into a 4x2 inch rectangle, then roll lengthwise into a log. Place each log next to each other in a 9x5 inch loaf pan. Cover; let stand 45 min.
  • Heat oven to 350°F. Whisk milk and remaining egg together. Brush dough with egg wash; sprinkle with pumpkin seeds.
  • Bake 25 to 30 min. until bread is golden brown. Remove from oven; cool 10 min. in pan. Remove from pan; set on wire cooling rack to cool completely.
