Marinated Cherry Tomatoes and Whipped Cottage Cheese Toasts

Breakfast Quick & Easy Snack

What you need:

  • 1/2 cup BREAKSTONE’S Cottage Cheese
  • 1/2 cup cherry tomatoes, halved
  • 1 Tbsp. shallots, thinly sliced
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. fresh thyme, chopped
  • 1 Tbsp. olive oil
  • 2 slices Italian bread, toasted

How to make it:

  • Blend cottage cheese in a blender or food processor until smooth; reserve.
  • Heat tomatoes, shallots, vinegar, thyme and oil in small saucepan on medium heat. Cook 3 to 5 min. or until liquid is reduced by half. Remove from heat.
  • Spread toast with cottage cheese. Spoon warm tomatoes over top.

Special Extra:

Garnish with fresh thyme leaves and black pepper.
