What you need:
- 1 Tbsp. olive oilÂ
- 2 tsp. red wine vinegarÂ
- 1 tsp. lemon juiceÂ
- 1 tsp. dried oreganoÂ
- 1 tsp. dried basilÂ
- 1/2 tsp. Dijon mustardÂ
- 1 tsp. chopped garlicÂ
- 1-1/4 cups BREAKSTONE’S Cottage Cheese, dividedÂ
- 1 cup sliced grilled chicken breastÂ
- 1/2 cucumber, slicedÂ
- 1/2 cup chickpeas, drained, rinsedÂ
- 1/2 cup cherry tomatoes, halvedÂ
- 1/4 cup pickled sliced red onionÂ
- 1/4 cup kalamata olives, slicedÂ
- 1/4 cup crumbled feta cheeseÂ
How to make it:
- Blend olive oil, red wine vinegar, lemon juice, oregano, basil, mustard, garlic and ¼ cup cottage cheese together in a food processor until smooth. Reserve.Â
- Combine remaining ingredients in a bowl. Drizzle with reserved dressing.Â
