Zucchini Cottage Cheese Fritters

Side Dish Snack

What you need:

  • 1-1/2 cups BREAKSTONE’S Cottage Cheese, divided
  • 1 clove garlic
  • 3 Tbsp. lemon juice, divided
  • 2 Tbsp. fresh dill
  • 1/2 cup cucumber, finely chopped
  • 1/8 tsp. freshly ground black pepper
  • 3 cups shredded zucchini, squeezed dry
  • 1/2 cup panko bread crumbs
  • 1/2 cup red onion, thinly sliced
  • 1/3 cup flour
  • 2 Tbsp. lemon zest
  • 1 egg

How to make it:

  • Heat oven to 400°
  • Place 1 cup cottage cheese, 1 Tbsp. lemon juice, garlic and dill in small food processor container; cover. Blend on low speed until smooth. Spoon into medium bowl.  Stir in cucumber and black pepper; cover. Refrigerate until chilled.
  • Mix zucchini, bread crumbs, onion, flour, lemon zest, egg and remaining cottage cheese and lemon juice in large mixing bowl until fully combined.
  • Divide mixture into 12 equal portions on baking sheet sprayed with cooking spray. Gently press down on each fritter creating 3 x ½ inch disks; spray with cooking spray.
  • Bake 30 min., flipping fritters over after 15 min.
  • Remove from oven; serve with cucumber sauce.
