Spiral Vegetable Cottage Cheese Fritters

What you need:
- 1 cup BREAKSTONE’S Cottage Cheese, divided
- 2 Tbsp. lemon juice, divided
- 2/3 cup basil leaves, divided
- 1 Tbsp. lemon zest
- 2 cups spiralized zucchini
- 1 cup spiralized butternut squash
- 1/2 cup chopped green onion
- 1/2 cup flour
- 2 eggs
How to make it:
- Heat oven to 400°
- Place 1/2 cup cottage cheese, 1 Tbsp. lemon juice, 1/3 cup basil and lemon zest in small food processor container; cover. Blend on low speed until smooth. Spoon into medium bowl; cover. Refrigerate until chilled.
- Chop remaining basil. Mix with zucchini, squash, onion, flour, eggs and remaining cottage cheese and lemon juice in large mixing bowl until fully combined.
- Divide mixture into 8 equal portions on baking sheet sprayed with cooking spray. Gently press down on each fritter creating 3 x ½ inch disks; spray with cooking spray.
- Bake 30 min., flipping fritters over after 15 min.
- Remove from oven; serve with basil sauce.
