Marinated Cherry Tomatoes and Whipped Cottage Cheese Toasts

What you need:
- 1/2 cup BREAKSTONE’S Cottage Cheese
- 1/2 cup cherry tomatoes, halved
- 1 Tbsp. shallots, thinly sliced
- 1 Tbsp. red wine vinegar
- 1 Tbsp. fresh thyme, chopped
- 1 Tbsp. olive oil
- 2 slices Italian bread, toasted
How to make it:
- Blend cottage cheese in a blender or food processor until smooth; reserve.
- Heat tomatoes, shallots, vinegar, thyme and oil in small saucepan on medium heat. Cook 3 to 5 min. or until liquid is reduced by half. Remove from heat.
- Spread toast with cottage cheese. Spoon warm tomatoes over top.
Special Extra:
